TOP COOKING TIPS for MOM

I want to share with you some extra TOP COOKING TIPS I have received from THE KLUTZY COOK via email.


Cooking Tip #1:     To prevent mould growing in tomato paste and similar jars, turn them upside down in the fridge (just make sure the lid is on nice and tight).


Cooking Tip #2:      When baking biscuits, don't put them in a straight line.  Instead, place them diagonally on the baking tray so that the air circulates better and they cook more evenly.



Cooking Tip #3:      Use a shallow pan when roasting rather than a deep one.  This allows heat to better circulate around the roast.


Cooking Tip #4:       To avoid 'frying' chopped onions and garlic, rather than sauteing them, add a little water to the pan.  This helps them to soften rather than going crisp.

Cooking Tip #5:       To make your own buttermilk (also known as 'sour milk') for baking, add 1/2 teaspoon of vinegar to a 1/2 cup of milk.  Buttermilk gives a lighter result than regular fresh milk.

Cooking Tip #6:     To prevent fruit breaking or splitting when stewing, boil the sugar and water together first.  Then add the fruit to the boiling water.

Cooking Tip #7:      If you have some coconut cream left in the can, tip it into another container (don't store it in the can - it will taste yucky).  Then it can be kept in the fridge for a week or pop it in the freezer for a month.

Cooking Tip #8:       When baking, make sure all the ingredients are at room temperature for best results.  Take eggs, butter, milk etc out of the fridge an hour or so beforehand.

Cooking Tip #9:      To stop yourself shedding tears while preparing onions try one of these ideas: 
  1. Cut the root end off the onion last
  2. Refrigerate onions before chopping
  3. Peel them under cold, running water
  4. (this is my favourite) Keep your mouth tightly closed while chopping. 
Cooking Tip #10:      To prevent water boiling and splashing over the top of saucepans, lay a large spoon or spatula (wooden is best) across the top of the pan.

  3. I know this will be so embarrassing for me to admit, but I rarely cook. And if I do, I only do the usual frying. ;/ But what I could probably relate to would be #4. I usually do a lot of sauteing -- which ends up with overcooked onions and garlic. At least, I know now what to add to avoid over-frying. :)

  4. I swear by tips no. 5 and 8. My mom and my sister bake, I watch and eat. Hehehe!

    I don't have a perfect formula for those onions. I've tried a lot of tips and tricks for it but none worked. Maybe I'll try tip no. 9.4 one of these days.

    I always do the #9 on onions and it really works. Thanks to tip #1 I have thrown a lot of tomato paste/sauce because they don't long even if being refrigerated.

  26. I got really curious about storing jars upside down to prevent molds... What's the rationale behind? hehe.

    I'll try doing the tips about onions. I always end up crying whenever I chop them. Hmz. =_=

  27. @Lily's Corner: turning the jars upside down to prevent the water condense on the lid and drip back to the surface of the jam it could possibly knock out some molds on the lid. This water could potentially mean better conditions for growth of molds. This theory is also supported by the suggestion found in old cookbooks where the jars are left to cool completely without lids to let the surface dry and form a skin, and then covered with a filter paper dipped in alcohol before tying them up with pergament paper and string.
